Crockpot Sweet Potato Chipotle Chili

A chili with sweet potatoes AND cauliflower?  Whatttt?  I know, it sounds insane but, it works!  Do you ever get tired of heaps of beans in your chili?  I do.  I mean I love beans but sometimes you just want something different.  Sweet potatoes are a super food and they’re a carb so why not swap them in for the beans?  You don’t have to use the cauliflower if you don’t want.  You could leave it out.  BUT, by using it, you’re adding a veggie to your dinner.  So why not?  Also, I had cauliflower leftover that needed to be used.

This chili has a great smokey flavor from the chipotles in adobo sauce.  If you like really spicy foods, feel free to add a little bit of the adobo sauce to your crockpot for more kick.  But, be careful because it is SPICY.  I added 1-2 tbs of sauce from the can and our chili was perfect for us.

Because the recipe doesn’t call for any tomato sauce, it doesn’t get a thick broth like most chilis do.  So don’t be concerned if your broth looks watery.  I told the hubs, I would actually classify this as more of a stew.

Ingredients

  • 2 sweet potatoes (peeled and chopped). Turns out to be around 3 1/2 cups
  • 3-4 cups broth
  • 1 lb ground pork, beef, chicken, or turkey (see notes for using precooked meat)
  • 1 tbsp olive oil
  • 14 oz diced canned tomatoes (drained) – you can use garlic or onion flavor canned if you like
  • 1 cup chopped white onion
  • 1 1/2 cup chopped cauliflower
  • 1 tsp minced garlic
  • 2 chipotles in adobo, chopped, found on Spanish/Mexican foods aisle or, 1/2 cup to 2/3 cup hot chipotle salsa may be substituted
  • 1/4 tsp cumin
  • 1/2 tsp paprika
  • 1/4 tsp black pepper
  • sea salt to taste
  • 1/2 shallot (diced) – optional
  • herbs to garnish
  • optional cheese topping

Instructions

  1. First chop and peel your potatoes. Place in a microwave safe bowl and steam with 1 tbsp water in them for 90 seconds.

  2. Next add your ground meat to the crock pot with broth and oil.

  3. Add your tomatoes, sweet potato, onion, cauliflower and mix all together.

  4. Finally, add your seasonings and chipotle peppers with sauce.

  5. Stir and cook on high for 3-4 hrs.

  6. Add your shallots the last hour if you adding them

  7. Add more paprika and or black pepper/sea salt when finished cooking if desired.

  8. Garnish with fresh herbs such as cilantro or basil works well too.
