Strawberry Poppy Seed Pasta Salad with Chicken

Summer is definitely here you guys.  I don’t know what the temperature was in your hometown today but here, it was 98 degrees.  Tomorrow’s forecast says 101!  So tonight I wanted something light, cool, and refreshing for dinner.  I popped into Publix on my lunch break and they had the most gorgeous strawberries on sale 2 cartons for $5.00.  SCORE!  I took a stroll down memory lane a remembered a recipe I that I had seen recently at Food Done Light for a strawberry salad with pasta, super greens, and chicken and I just knew that was what I had to make.  Gang, this salad was was a big winner.  The dressing is tangy but light and balances out the sweetness of the strawberries.  The thin red onion adds a nice bite and also some crisp texture right along with those poppy seeds.  Throw in some chicken for protein and Voila!  You’ve got yourself a great low calorie summer dinner!


Strawberry Poppy Seed Pasta Salad with Chicken
Recipe type: Salad, Main Dish, Chicken
Prep time:  35 mins
Cook time:  10 mins
Total time:  45 mins
Serves: About 8 cups
  • ¼ cup apple cider vinegar
  • 1 tsp. Dijon mustard
  • 1 tbsp. agave or honey
  • ½ tsp. kosher salt
  • ¼ cup extra virgin olive oil
  • ½ lb. boneless skinless chicken tenders
  • ½ box Barilla Penne
  • 1 ½ cups super green mix (like kale, spinach, etc), julienned
  • 1 cup sliced strawberries
  • ¼ cup thinly sliced red onion
  • ½ cup crumbled feta cheese
  • 1 tbsp. poppy seeds
  1. In a small bowl, whisk together first four ingredients. Slowly whisk in olive oil.
  2. Place chicken in a plastic bag and pour in 3 tbsp. dressing. Let the chicken sit for 30 minutes. (Put the remaining dressing in the refrigerator)
  3. Pour a little oil on a paper towel and rub over a grill pan. Heat a grill pan over medium-high heat.
  4. Cook the chicken 4 to 5 minutes per side, or until fully cooked.
  5. Let cool slightly then thinly slice.
  6. Bring a large pot of water to boil and cook penne according to manufacture’s instructions. Drain.
  7. Pour penne into a bowl and stir in reserved dressing. Let cool.
  8. Add in the remaining ingredients and stir well.
  9. Refrigerate until ready to serve.
